Climate Control The process of storing wine requires the correct conditions. Long term storage of wines can be both fun and lucrative, provided that the proper conditions are available. If you happen to own cave property, you might be able to store your wines in a passive system; however, today the majority of storage environments need to be both temperature and humidity controlled with modern equipment.
Cuvee’s custom climate control systems are built individually to the tolerances and specifications of each room we design and build. Not one of our rooms is ever the same, therefore neither are the systems, which assure the integrity of the storage conditions. The industry standard is to store at a temperature of 56-58 degrees, and 58-72% humidity. Changes in both temperature and humidity will compromise the integrity of your wine investment. Temperature changes create a vacuum in the bottle since the liquid will expand at roughly seven times the expansion rate of the glass bottle. This vacuum effect allows oxidation to occur in the wine which ruins the wine by creating a bitter taste. Humidity changes present their own unique issues. High humidity will allow for mold spores to grow in the corks, and also has been linked to property value decreases as well as major health concerns. (Please see our white paper) A low humidity level allows the wine to be drawn out of the bottle, which then is replaced by air creating the oxidation issue described earlier.
